Antipasto Tortellini Pasta Salad
serves 4
Ingredients
- 16 oz cheese tortellini, cooked and cooled
- 1 C cherry tomatoes, halved
- 1 C kalamata olives, pitted and halved
- 4 oz pepperoni, bite-size chop
- 4 oz sopressata, bite-size chop
- 1 C mozzarella pearls
- 4 oz sharp provolone cheese, bite-size chop
- 3/4 C roasted red peppers, sliced
- 1/4 ea red onion, small dice
- 8 ea pepperoncini peppers
- 6 ea basil leaves, ribbons
- 1/4 C olive oil
- 1/4 C red wine vinegar
- 1 cl garlic, minced
- 1 t dried oregano
Instructions
- Whisk together the olive oil, vinegar, garlic and oregano, then season to taste.
- Toss the remaining ingredients in the dressing, plate and serve chilled.
